Cheeseburger Muffins

This is one of my tailgate recipes. It’s a favorite with the guys.

1/2 pound ground beef

1 small onion, finely chopped

2-1/2 cups all-purpose flour

1 TBSP sugar

2 tsp baking powder

1 tsp salt

3/4 cup ketchup

1/2 cup butter, melted

2 eggs

1 tsp yellow mustard

2 cups (8 oz) cheddar cheese, shredded

 

Heat oven to 425

In a large skillet, cook beef and onion over medium heat until meat is no longer pink; drain

In a small bowl, combine flour, sugar, baking powder, and salt. In another bowl, combine ketchup, milk, butter, eggs, and mustard; stir into dry ingredients just until moist. Fold in beef and cheese.

Fill greased muffin cups 3/4 full. Bake 20 to 25 minutes.

 

Yield:  2 dozen
