Cheddar Rice

This recipe can be cooked on top of the stove or in a slow cooker, either way it’s a great side dish.

2 cups uncooked brown rice

3 TBSP butter

1/2 cup thinly sliced green onions

1 tsp salt

4 cups water if using stove top-5 cups if using slow cooker

2 cups shredded cheddar cheese

1/2 tsp pepper

Combine rice, butter, green onions and salt in a saucepan or 4 quart slow cooker. Bring water to a boil in a saucepan and pour over rice mixture. Cover and cook on low heat 2 to 3 hours in slow cooker. 25 minutes on stove top or until liquid is absorbed. Fluff with a fork. Stir in cheese 5 minutes before serving.

Slow Cooked Sweet and Sour Pork

Another great slow cooker recipe.

2 TBSP plus 1-1/2 tsp. paprika

1-1/2 pounds boneless pork loin roast, cut into 1 inch strips

1 TBSP canola oil

1 can (20 oz) unsweetened pineapple chunks

1 medium onion, chopped

1/4 cup cider vinegar

3 TBSP brown sugar

3 TBSp reduced sodium soy sauce

1 TBSP Worcestershire sauce

1/2 tsp salt

2 TBSP cornstarch

1/4 cup cold water

Hot cooked rice

Place paprika in large zip loc bag. Add pork a little at a time and shake to coat. In a medium skillet over medium-high heat add oil. Brown meat on all sides in batches. Transfer to a 3 quart slow cooker.

Drain pineapple, reserve juice; refrigerate the pineapple. Add juice, onion, bell pepper, vinegar, brown sugar, soy sauce, Worcestershire sauce, and salt to slow cooker; mix well. Cover and cook on low for 6 to 8 hours or until tender. Combine cornstarch and water until smooth; stir into pork mixture. Add pineapple chunks. Cover and cook 30 minutes longer or until thickened. Serve over hot rice.

Quick Chicken Cacciatore

Flour

4 boneless skinless chicken breast

2 cloves garlic–finely minced

4 TBSp olive oil

1 jar Classico Tomato and Basil pasta sauce

1 small green bell pepper–cut into thin strips

1 small red bell pepper–cut into thin strips

2 slices provolone cheese–cut in half

2 cups cooked riceinstant rice works well with this recipe

Coat chicken in flour. In a large skillet heat oil and brown chicken on both sides. remove chicken and add pasta sauce, and garlic. Add chicken to sauce. Bring to a boil–reduce heat to low, cover and simmer 25 to 30 minutes. Add bell peppers during the last 5 minutes of cooking. Uncover–top each piece of chicken with cheese. Serve over rice.

Shrimp Creole

We have wonderful fresh shrimp on the Alabama Gulf Coast. This recipe enhances that freshness.

1/2 cup lite Italian salad dressing

1 medium bell pepper–cut into chunks

1 medium onion–thinly sliced

1–14 1/2 oz can diced tomatoes–undrained

1/8 tsp crushed red pepper

1 pound fresh uncooked, peeled and deveined

2 cups hot cooked rice

In a large skillet over medium heat. Add dressing, green peppers and onions. Cook until tender. Stir in tomatoes and simmer covered for 15 minutes. Add shrimp and red pepper. Simmer 5 minutes or until shrimp are pink. Serve over hot rice,
