Red Velvet Crinkle Cookies

Red Velvet cake is the star on holiday dessert tables. These cookies shine just as bright!

1/3 cup butter

1 cup firmly packed light brown sugar

1 egg

1-3/4 cups all-purpose flour

3 TBSP cocoa

1-1/2 tsp baking soda

1-1/2 tsp salt

2 TBSP milk

2 tsp vanilla

1 (1 0z) bottle red food coloring

1-1/2 cup powdered sugar

Heat oven to 350

Line 2 baking sheets with parchment paper; set aside. In a large bowl, beat butter and brown sugar at medium speed until light and fluffy. Add egg, beat until combined. In another bowl, sift together flour, cocoa, baking soda, and salt. Gradually add flour mixture, beating until combined. Add milk, vanilla and food coloring, stirring until combined.

Using a teaspoon sized scoop; drop dough onto wax paper. Shape into balls; roll in powdered sugar. Place ball 2 inches apart on baking sheets. Bake 12 minutes. Cool on pan 5 minutes. Move to wire cooling racks and cool completely.

Yield:  about 3 dozen
