Boiled Peanuts

2 pounds dried raw peanuts ( in shells)

1/2 cup salt

Soak peanuts in water to cover in a large stock pot at least 8 hours or up to 24 hours. Weigh pea nuts down with a heavy plate so that nut are totally sub-merged; Drain and rinse.

place nuts and salt in stock pot with 4 1/2 quarts water; bring to a boil over high heat. Cover,reduce heat to medium-low, and cook 6 hours or until tender, adding water as needed; stir occasionally. remove from heat and let stand for 1 hour. Drain before eating

Cajun Peanuts: Add 1/2 cup Cajun seasoning  to the soaking liquid; then add 7 TBSP liquid Cajun crab boil to pot before cooking
