True Southern Cornbread

An iron skillet is a must have for this recipe.

 

2 Cups self rising cornmeal

3 TBSP vegetable oil

1/2 cup flour

1 egg, lightly beaten

1/2 cup buttermilk

water

Pre-heat oven to 400

Heat oil in a 7 inch iron skillet over medium heat. Sprinkle bottom of skillet with flour. In a bowl combine cornmeal, flour,buttermilk and egg. Mix well. If too thick add water a little at a time. Batter should be thick but not dry. Pour into hot skillet. Place in oven and bake 25 to 30 minutes or until golden brown.
