Smoky Mashed Potatoes

We love potatoes so much in the south that we occasionally cook Idaho and Sweet potatoes together. That’s the case in this recipe.

 

2 large Idaho potatoes, peeled and diced

8 ounces smoked Gouda cheese, shredded

1 cup cream, divided

8 TBSP butter, divided

2 tsp salt, divided

2 large sweet potatoes

1 tsp smoked paprika

 

Place Idaho potatoes in a large sauce pot with enough water to cover. Bring to a boil; add 2 TBSP salt. Reduce heat to low, cover, and simmer for 10 to 15 minutes, or until tender. Drain and return to pan. Add Gouda cheese, 1/2 cup cream, 4 TBSP butter, and 1 tsp salt. Using a handheld potato masher, mash potatoes. If too thick add more cream 1 TBSP at a time.

Pierce sweet potatoes with a fork; place on paper towels in a microwave oven. Microwave on high for 8 minutes, or until tender, rearranging potatoes after 4 minutes. Let stand 5 minutes. Peel potatoes and mash. Add remaining cream, 4 TBSP butter, 1 tsp salt, and smoked paprika, stir until blended. In a 8 x 8 baking dish, put sweet potatoes on one side and the white potatoes on the other side. Swirl with a spoon, but do not mix completely together.

Almond Cream Cheese Bread Pudding with Amaretto Cream Sauce

1 loaf of each–French bread, diced into 1 inch cubes

1 loaf Shallah bread, diced into 1 inch cubes

1 package Keiser rolls, diced into 1 inch cubes

1 ( 8 oz) package cream cheese, softened

9 large eggs, room temperature

1/4 cup sugar

3 tsp vanilla extract, divided

3 cans Solo Almond Filling

1 cup butter, melted and divided

2-1/2 cups heavy cream

Dash of salt

2 TBSP Almond filling

2 TBSP sugar

1 egg yolk

1/4 slivered almonds

Amaretto Cream Sauce

Preheat oven to 325

Coat a 13x9x2 baking dish with cooking spray. Arrange one third of bread cubes in baking dish. Beat cream cheese, 1 egg, 1/4 cup sugar and vanilla with mixer until smooth. Spread half of mixture over bread. Whisk together 1-1/4 cups almond filling and 1/2 cup melted butter. Spread half of mixture over cream cheese mixture on bread. Repeat layers once, using bread and remaining cream cheese mixture and almond mixture; put remaining bread cubes on top. Whisk together 8 eggs, 2 tsp vanilla, heavy cream, and salt. Pour over bread mixture. Cover and chill 30 minutes or until most of egg mixture is absorbed. Whisk together 1/2 cup melted butter, 2 TBSP almond filling, 2 TBSP sugar and egg yolk until blended. Drizzle evenly over bread. Sprinkle with almonds.

bake 1 hour or until set. Serve with Amaretto Cream Sauce

Amaretto Cream Sauce:

1/2 cup Amaretto liquer

2 TBSP cornstarch

2 cups whipping cream

1/2 cup sugar

Combine liquer and cornstarch, stir until smooth. Cook cream in heavy saucepan over medium heat; stirring often, just until bubbles appear. Gradually stir in amaretto mixture. Bring to a boil and add sugar;  cook until slightly thickened. Remove from heat. Cool completely.

Chocolate Custard Ice Cream

2/3 cup cocoa

2 cups sugar

2 TBSP cornstarch

1/4 tsp salt

2 cups milk

3 eggs

1 TBSP vanilla

3 cups half and half

2 cups heavy cream

 

Combine cocoa, 1-1/2 cups sugar, cornstarch, and salt in a saucepan. Gradually stir in milk. Cook and stir over medium heat until mixture comes to a boil; boil 1 minute; stirring constantly. Remove from heat. Beat eggs with 1/2 cup sugar. Blend in a small amount of hot mixture into eggs; add to mixture in saucepan. Blend in vanilla and both creams. Chill. Freeze in an ice cream freezer according to manufacturer’s directions.

Makes 3 quarts

 

 

Pasta Milano

4 chicken breast

1 teaspoon garlic powder

1 teaspoon salt

1 teaspoon black pepper

1 ( 36 oz) package farfalle pasta

4 tablespoons butter

1 ½ cups sun-dried tomatoes

1 pound button mushrooms, sliced

1 quart heavy cream

1 tablespoon roasted garlic

½ teaspoon black pepper

2 teaspoons salt

1 cup fresh parmesan cheese, grated

Wash and dry chicken. Mix garlic powder, salt and pepper, sprinkle on both sides of chicken. Cook chicken on stove top grill or in large skillet until juices run clear. Set aside. Cook pasta according to package directions. Meanwhile saute mushrooms and tomatoes in butter until soft. Place heavy cream, roasted garlic, salt, pepper and cheese in food processor and puree.

Place cream mixture in large saucepan and bring to a boil over medium heat. Lower heat and simmer 15 minutes or until thickened. Mix in mushrooms and tomatoes then add to cooked pasta. Slice chicken and place on top of pasta. Garnish with parsley and parmesan cheese.

Old Fashion Chicken and Dumplings

This is one of the South’s most cherished recipes!! Southern women have made this for more than 100 years.

1-whole frying chicken

1/2 cup butter

Salt to taste

4 cups all-purpose flour

2 tsp salt

3/4 cup vegetable shortening

1/2 pint heavy cream of half and half

Black pepper to taste

In a large Dutch over put in whole chicken and cover with cold water. Cook over medium heat until chicken is done; about 1 to 1-1/2 hours. Remove and let cool.  Reserve broth. When cooled remove skin, fat and bones. Chill covered for 30 minutes.

In a large bowl, combine flour, and 2 tsp salt, cut in shortening with a pastry blender until mixture is well incorporated. Add chicken broth 1/2 cup at a time until a stiff dough is made. It may not need the entire 1-1/2 cup. Knead dough gently until there are no dry spots in the dough. Set aside. Strain reserved chicken; Skim fat; Bring to a rolling boil over high heat. Divide dough into 3 equal pieces, roll out on a floured surface to 1/8 inch thick; cut into 1 inch wide strips and drop into hot broth. Continue with other dough until all have been added to broth. Reduce heat to simmer; add cream and extra salt and pepper to taste. Cook 20 minutes.

Fettuccine with Roasted Red Pepper Sauce

3 large red bell peppers

1/2 cup heavy cream

1/4 cup Italian salad dressing

2 TBSP minced fresh basil

salt and pepper to taste

1–12 oz package fettuccine noodles

Fresh grated Parmesan Cheese

Pre-heat oven to broil

In a large foil lined baking sheet add peppers; broil for 20 minutes, turning occasionally until pepper skins are black. immediately put into a paper bag and close tightly. Let cool 30 minutes. Under cold running water peel off pepper skins and remove stems and seeds. Fill a Dutch oven half full of water and bring to a boil over high heat. Add fettuccine noodles and cook according to package directions. In a food processor or blender; add peppers, cream, italian dressing, basil, salt and peppers. Process until smooth. toss cooked pasta with sauce. top with grated parmesan cheese

Alfredo Sauce

6 TBSP butter

2/3 cup heavy whipping cream

1/2 tsp salt

1/8 tsp white pepper

1 cup fresh grated parmesan cheese

Place butter and cream in a heavy saucepan. Cook over medium heat. Cook stirring constantly until well blended and mixture comes to a boil. Cook 2 minutes.Reduce heat to low. Add salt and pepper. Remove from heat and stir in cheese. Pour over cooked pasta.
