Baked Apple Pancake

1 cup pancake mix

2/3 cup milk

2 TBSP vegetable oil

1 egg, beaten

1/4 cup butter

1/3 cup packed light brown sugar

1 medium Golden Delicious apple, peeled and sliced


Preheat over to 350

In a bowl, combine pancake mix, milk, oil,  and egg. In an 8 inch oven proof skillet, melt butter. Stir in brown sugar, and apple slices; saute until sugar is dissolved. Pour batter over apple mixture. Cook, uncovered, over medium heat until bubbles form on top of pancake.

Bake, uncovered for 12 to 17 minutes or until golden brown. Invert onto serving plate.


Serves 1 to 2


Cranberry Chutney

This flavorful condiment is great served with grilled pork tenderloin, grilled chicken or served warm over baked Brie or cream cheese.


2 (8 oz) cans crushed pineapple

1 (16 oz) can whole berry cranberry sauce

1/4 cup packed light brown sugar

1/2 tsp ground ginger

1/4 tsp salt

3 green onions, chopped

Drain pineapple well; pat dry with paper towels. Stir together pineapple and next 4 ingredients in a saucepan over medium heat, and bring to a boil; reduce heat to low and cook 5 minutes, stirring often until thickened. Remove from heat and stir in green onions. Will keep in refrigerator 2 weeks.

Makes 3 cups



Brown Sugar Pound Cake

I have had this recipe since 1975. It is a oldie but goodie.

1 cup shortening

1/2 cup butter, softened

1 (1 lb) box light brown sugar

5 large eggs

3 cups all-purpose flour

1/2 tsp salt

1/2 tsp baking powder

1 cup evaporated milk

1 tsp vanilla

Preheat oven to 300

Beat shortening, brown sugar and butter until creamy. Adds eggs one at a time, beating well after each addition. Combine flour, salt and baking powder; add alternately  with milk, beginning and ending with flour mixture. Stir in vanilla. Pour into a greased and floured bundt pan. Bake 1 hour and 15 minutes or until a toothpick comes out clean. Cool in pan on a wire rack for 15 minutes. Remove from pan and cool completely on wire rack. Drizzle with glaze

Brown Sugar Glaze:

1/2 cup butter

1 cup firmly packed light brown sugar

1/4 cup evaporated milk

3 cups powdered sugar, sifted

1 tsp vanilla

Melt butter in a medium saucepan over medium heat. Whisk in brown sugar, cook 1 minute; Add milk, powdered sugar and vanilla; whisk until creamy. Remove from heat, and pour over cooled cake.

Orange Chicken

1 pound boneless, skinless chicken breast–cut into 1 inch pieces

2 medium carrots, thinly sliced

1 medium bell pepper, thinly sliced

1 medium onion, thinly sliced

2 TBSP Olive oil

5 tsp flour

1 TBSP brown sugar

1 cup orange juice

1/3 cup chili sauce

12 ounces  mini penne pasta

In a large skillet, brown chicken pieces , carrots, bell pepper, and onion until chicken is done and vegetables are tender crisp. Cook pasta according to package directions

In a small bowl, combine flour and brown sugar; stir in orange juice and chili sauce until smooth. Add to skillet . Bring to a boil; cook and stir for 2 minutes or until thick. Serve over pasta.

Fourth-of-July Baked Beans

1 -roll- hot breakfast sausage–any brand

8 slices smoked bacon–diced

1 large onion, diced

1 medium bell pepper, diced

2-17 oz. cans pork and beans–drained

1/2 cup ketchup

1 small can tomato paste

1/2 cup packed dark brown sugar

2 heaping TBSP yellow mustard

1 TBSP salt

1 TBSP garlic powder

Pre-heat oven to 350

Crumble sausage in a large skillet. Cook until almost done. Add diced bacon and cook until crisp. Add onion, cook until translucent add the bell pepper. Remove and drain on paper towels. In a 13×9 baking dish put pork and beans. In a bowl whisk together ketchup and tomato paste adding a little water if too thick, add brown sugar, mustard, salt and garlic powder. pour into beans and mix well. Bake covered for 45 minutes. Remove cover and bake 15 additional minutes.

Spicy Steak Salad

1-1/2 pounds boneless sirloin steak, thinly sliced

3 TBSP vegetable oil

1/3 cup lemon juice

1 TBSP light brown sugar

1 TBSP low sodium soy sauce

1 tsp dried basil

1 jalapeno pepper, seeded and minced

2 garlic cloves, minced

1/2 tsp grated fresh ginger

1 large red bell pepper, finely sliced in strips

1/2 medium cucumber, diced

6 cups lettuce

In a bowl combine lemon juice, brown sugar, soy sauce, and basil. Mix well. Heat oil in skillet over medium heat. Add jalapeno pepper, garlic and ginger. Stir constantly for 1 minute. Add steak. Cook until tender, stirring often. Toss steak with bell pepper and cucumber in a bowl. Divide lettuce onto 4 plates and top with steak. pour lemon juice mixture into skillet and bring to a boil.  Drizzle over plated salads. Serve immediately.

Serves 4

Candied Sweet Potatoes

All great Southern Cooks use iron skillets. If you do not have one, I recommed buying at least three in various sizes.

4 pounds sweet potatoes

3 tablespoons vegetable oil

1/2 cup packed light brown sugar

1/2 stick butter

3/4 tsp salt

1 teaspoon cinnamon

In an iron or heavy bottom skillet, heat oil over medium heat. Peel potatoes and cut into rounds 1 inch thick. place potatoes into hot oil and brown on both sides. Cook in batches if necessary. Add butter to skillet, when melted add potatoes. Reduce heat to low. Mix cinnamon with brown sugar sprinkle on top and stir until well coated. Cover and cook 15 to 20 minutes or until tender, stirring often.

Serves 4 to 6
