Amaretto Creme Brulee

3/4 cup heavy cream

1/2 cup Coffee Mate Amaretto flavored non-dairy creamer

1/4 cup plus 1 TBSP granulated sugar

3 eggs, separated

1 egg

3 TBSP cornstarch

Hot water

6 TBSP packed light brown sugar


Preheat oven to 300

Place 6 one cup ramekins or a round one inch deep glass baking dish in a deep roasting pan.

In a large bowl, whisk together 2-1/2 cups cream, non-dairy creamer, 1/4 cup sugar, egg yolks, 1 whole egg, and cornstarch until smooth. Divide evenly among ramekins; place in oven. Fill pan with enough hot water to come half way up sides ramekins.

Bake 30 minutes or until center is set. Transfer ramekins to cooling rack. Cool 30 minutes then refrigerate until chilled. just before serving, turn oven to broil. Place rack 4 inches from heat. Sprinkle each custard evenly with 1 TBSP brown sugar. broil until sugar is melted and golden, about 2 minutes. Let stand 10 minutes.

Beat remaining 3/4 cream and 1 TBSP sugar until soft peaks form. Serve with custards.
