Tropical Banana Bread

2 cups all-purpose flour

1 ¼ teaspoon baking powder

¾ teaspoon baking soda

½ teaspoon salt

½ teaspoon cinnamon

2 ripe bananas, mashed (1 cup)

¾ cup granulated sugar

½ cup egg beaters, egg substitute

1/3 cup + 1 tablespoon low fat milk

1 (8oz) can crushed pineapple, drained

2/3 cup confectioners’ sugar

½ teaspoon coconut extract

Heat oven to 350 degrees

Coat an 8 ½ x 4 ½ x ½ inch loaf pan with cooking spray. Combine flour, baking powder, baking soda, salt and cinnamon, set aside. On medium high speed, beat bananas and sugar until blended. Stir in egg. On low speed beat in flour mixture alternately with milk until just combined. Stir in pineapple. Pour into prepared loaf pan. Bake 45 minutes or until pick inserted into middle comes out clean. Cool 10 minutes in pan. Remove from pan to cooling rack. When completely cool, Combine confectioners’ sugar, extract and 1 tablespoon milk until smooth. Pour over bread.
