Hot Crab Dip

1 stick butter

1 medium onion, finely diced

2 cloves garlic–grated

6-TBSP Flour

1-1/2 cups milk

1/4 tsp cayenne pepper

2 tsp dry mustard

4 ounces, sharp white cheddar cheese, shredded

2 TBSP fresh lemon juice

zest of one lemon

2  tsp Worcestershire sauce

10 ounces lump crab meat

1/2 cup dry bread crumbs


Preheat oven to 400 degrees

In a medium saucepan, over medium heat melt 6 Tablespoons of butter, add onions and garlic. Cook until soft; about 3 minutes. Whisk in flour, stirring constantly for 4 minutes.Slowly pour in milk, whisk until thickened, stir in cayenne pepper and mustard. Add cheese, stir until melted. Remove from heat and add lemon juice, lemon peel, Worcestershire sauce, and crab. Season with salt and pepper. Transfer to oven proof 1 quart casserole dish. Melt remaining butter and mix with bread crumbs. Sprinkle on top. bake 25 minutes. let stand 10 minutes before serving.
