Glazed Pork Tenderloin

1 pork tenderloin (about 3/4 lb.)

2 tsp dried oregano

1 tsp dried parsley flakes

1/2 tsp dried rosemary, crushed

1/2 tsp dried thyme

1/2 tsp garlic powder

1/2 tsp seasoned salt

1/8 tsp black pepper

1/8 tsp cayenne pepper

 

GLAZE:

4-1/2 tsp brown sugar

4-1/2 tsp Dijon mustard

1/4 tsp honey

Pre-heat oven to 350

In a small bowl, combine the first 8 ingredients with the exception of the meat. Rub over tenderloin. place in large zip loc bag, seal and refrigerate over night.

 

Combine the glaze ingredients. Place tenderloin on a rack in a shallow foil line roasting pan. Bake uncovered for 40 to 45 minutes or until a meat thermometer reaches 160 degrees. baste occasionally with glaze. Let stand 10 minutes before serving.

 

Serves 2

 

 

 

5 ounces cooked pork equals 263 calories.  7 g fat (2 saturated) 95 mg cholesterol, 737 mg sodium, 14 g carbs, 1 g fiber, 35 g protein.
