Apple and Cranberry Country Bread

2 cups self rising flour

1/2 cup butter

1 cup sugar

2 eggs

1 tsp vanilla

2 tsp. grated orange peel

1/4 milk

1 apple, peeled, cored, and chopped

1/2 cup dried cranberries or currents

-Pre-heat oven to 350

Grease and flour a 9×5 loaf pan and set aside. Beat butter and sugar until light and fluffy about 5 minutes. Add eggs, vanilla, and orange peel until blended, scraping sides of bowl occasionally. Alternately add flour and milk just until blended. Stir in apple and cranberries. Turn into prepared pan. Bake 55 minutes or until a tooth pick comes out clean. Cool in pan on wire rack for 20 minutes. Remove from pan and cool completely.
